This unusual soft-ripened sheeps milk cheese has a distinctive orange crust.

When young its gentle, sweet and velvety, as the cheese matures the paste ventures out of the growing evermore rusty orange rind with a lovely oozyness, exhibiting mushroomy, grassy flavours with a wonderful earthiness.
